The Siccagno Tomato

The Siccagno tomato cultivated near Regaleali in the town of Valledolmo is ideal for making sauce, tomato paste, and tomato confit. It is a dense, compact tomato with very little water that is dressed and dried in the oven at a very low temperature. The result is small tomato “confetti” perfect for putting on pasta or spreading on bruschetta.
