Gandolfo Filippone founded his company at an altitude of one thousand metres in the pristine environment of the Madonie Regional Natural Park. The high mountain climate, the clean air and the quality of the land and water make this area an ideal place for the organic farming of crops such as laurel. The leaves are very aromatic and contain a fragrant essential oil that is released when they are crushed.
Bay leaves can be used fresh or dried in many recipes, for example to marinade meat for a stew or to cook chestnuts. Boiled with lemon rind they make an excellent digestive herbal tea.
