New entry - Anchovy Paste

Anchovy paste is a mixture with an anchovy base: they are cleaned and deboned, removing the fishbone, ventral and dorsal fins, and tail, and they are then mashed with vegetable oil until they have formed an actual paste. It is an ancient condiment common to the gastronomic culture of many countries. The anchovies from the Benedetto Scalia producer are fished in Sicilian waters.
