Recommended use: It can be used as a natural flavour enhancer for foods such as vegetables or simply grated on bread or croutons. Anchovy paste is a compound based on anchovies that are first washed, then have their bones, ventral and dorsal fins and the tail removed, and then are mashed with oil until a genuine paste is formed. It is a very old condiment that is now widespread in the cuisine of many countries.
Anchovy fillets are processed after the salted anchovies have been aged properly (the anchovies remain at least 12 weeks in plastic and/or fibreglass bins). The company processes a catch of anchovies that are provided nearly always by the local fishing fleet, thereby making sure that the product has the freshest taste possible. All stages of processing, with the exception of centrifugation and the closing of the packages, are carried out manually in accordance with the oldest traditions.
