In the quiet of the countryside, just a few kilometres from the sea coast of Trapani, Francesca Simonte, owner of the company that bears her name, passionately manages approximately 110 hectares. Wheat, chickpeas, lentils, melons, garlic and tomatoes are grown according to the ancient practice of crop rotation. Among the vegetables cultivated is the cartucciaru melon of Paceco, which Francesca Simonte has put back into production after 30 years of neglect. The town now boasts a group of producers recognized by the Slow Food organization. The various crops are rotated in a cycle of many years that allows the soil to maintain its fertility. To minimize the impact of any factor that could harm the vitality of the soil, conversion to organic farming methods is currently under way.
