The Cooperativa Oro Rosso of Sicily was founded in 2007 by 12 young farmers motivated by the desire to enhance and promote saffron cultivation – already present in the territory since ancient times – on a cultivated area of about two hectares. In 2010, active collaboration began with the Consorzio di tutela del Piacentino Ennese (Consortium for the Protection of Piacentino Ennese Cheese), which has been awarded the DOP label and whose production specifications require 3-4 grams of saffron per 100 litres of milk. The production costs of saffron are very high, so obtaining a real source of income is unthinkable, considering the quantity and quality of labour necessary to cultivate and process the product.
