To prepare the pesto:

  • 300 grams fresh almonds, blanched, peeled and chopped
  • 50 grams basil, washed and stemmed
  • 1.5 kilograms ripe tomatoes, diced
  • 2 cloves garlic from Nubia, minced
  • 1 cup olive oil
  • Pinch of chili from Madonie
  • Cristal of Salt from Mozia
  • 500 gr Busiate Trapanesi

Combine all ingredients by hand, or if you prefer a smoother pesto, combine in a food processor. Adjust seasoning to your preference. Drain the cooked pasta and add to the bowl, along with the pesto trapanese. Serve immediately.
